Monday ~Menu Ideas, Recipes, & More~

I will be sharing lots of Valentine's ideas this week!....Love this pink holiday!...What about you??

For our Monday post, I have these CUTE rich filled chocolate cupcakes you can make yourself...you want to try?  They are super perfect for Valentine's Day!

As you can read on the picture, I found them on This Chick Cooks blog!  If you haven't read her blog, you should.  She has some fantastic recipes for the whole family and any occassion!

Ingredients:

1/3 cup HERSHEY'S Cocoa

1 teaspoon baking soda

1/2 teaspoon salt

1 cup water

3 tablespoons vegetable oil

3 tablespoons applesauce

1 tablespoon white vinegar

1 teaspoon vanilla extract

Filling:

4 ounces cream cheese (I used the 1/3 less fat), softened

3 tablespoons sugar

1 egg white

1 pinch salt

1/3 cup mini chocolate chips

Preheat oven to 350 and line 12 muffins cups. Mix dry batter ingredients. Add wet batter ingredients and blend with mixer on medium for 3 minutes.
